So the t-shirt was made.  "Have you seen him" with a picture of one of the most admired chefs among chefs.  I think DJ Clue, from the radio station Hot97 in NYC, refers to himself as "your favorite DJs favorite DJ". I teach cooks everyday. How to be more efficient, work faster, think about their third move before they’ve even made their second - I've just recently realized I am good at this. I watch cooks - I tell them tiny things about their movements that will make their plates come up faster and cleaner.  Cooks watch me - which I still find bizarre, but it requires me to make sure I make every movement count. looking at this site, particularly some of the products, you may be thinking to yourself, "why the hell are they even trying to do this?" well, let me tell you. I was on my way to work one morning, walking to a particularly popular restaurant in SoHo, where I have to cover shifts for other Sous Chefs on vacation.  On broadway I saw a bumper sticker on a pick up truck that said, "local so and so does it in the elevator." I've been working in professional kitchens for most of my adult life.  As anyone in this industry knows you develop strong relationships to the people closest to you in these scenarios, trauma bonds.  We work non-stop, abusive hours - rarely taking breaks unless its to suck down a smoke as quickly as possible or basically snort some chicken and rice.
